Convenience food is increasingly popular and consumers are more and more demanding regarding the characteristics of the products they eat. For instance, a nice, shiny aspect and good stretch is appreciated in pizza cheese while cheese in burgers should have a soft, smooth mouthfeel but shouldn’t be runny.

Food manufacturers themselves face several constraints that need to be addressed: cheese should have a long shelf life, slice and grate well without sticking and deliver the proper aroma and taste in the final application.

Processed cheese is the perfect ingredient for such purposes. Having undergone heat treatment, processed cheese is shelf life stable, which means its functionality will not evolve, contrary to natural cheese whose characteristics might alter with age. Moreover, the heating process guarantees excellent microbiological parameters. Last but not least, functional properties can be controlled and customised through formulation.

Dairygold Food Ingredients’ processed cheeses are meant for a wide range of ready meals applications such as quiches, pizzas, cordons bleus, sandwiches, hamburgers, toasted sandwiches and salads.

Our formulation know-how and our application focus enable us to offer bespoke products with the required colour, sensory profile and functionalities:

  • High melt processed cheeses: Their good melting ability and coverage make them highly suitable for pizzas and ready meal toppings, for instance. We can control stretch and browning of these products on request.
  • Medium and low melt processed cheeses: These are designed for applications where the cheese shouldn’t leak too much out of the product, as it is the case in cheeseburgers, cordons bleus and toasted sandwiches.

Thanks to raw material selection, we ensure that our processed cheeses’ flavour is always right. Cheddar, emmental or blue cheese profiles are only examples of what we propose.

In order to meet the industry’s constraints, our product formats are adapted to food manufacturers’ in line equipment and dosing processes:

  • Chubs and blocks, which dimensions and weight can be adapted, are ideal for in-house slicing and grating.
  • Grated processed cheese and processed cheese cubes, packed in bags, are ready to use, easy to dose and don’t cake through shelf life.
  • Soft processed cheeses are squeezable or pumpable and designed for specific processes.

Moreover, we can deliver in stackable and returnable packaging.
